Rotisserie Chicken Alfredo Pasta: Fast and Creamy!

A fast and creamy Italian-inspired dish featuring tender shredded rotisserie chicken tossed in a rich, homemade Alfredo sauce with fettuccine pasta.

  • 12 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • 2 cups rotisserie chicken, shredded
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Cook the fettuccine pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic for about 1 minute until fragrant.
  3. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, salt, pepper, and nutmeg. Stir until the cheese is melted and the sauce is smooth.
  4. Add the shredded rotisserie chicken to the skillet and stir until heated through.
  5. Toss the cooked fettuccine into the skillet. Mix well until coated, adding reserved pasta water as needed to reach desired consistency.
  6. Serve hot, garnished with fresh parsley.

  • Use a store-bought rotisserie chicken to save time on prep.
  • Do not let the garlic brown to avoid a bitter taste.
  • Reserve pasta water to adjust the creaminess of the sauce.
  • Freshly grated Parmesan melts better than pre-shredded varieties.
