- 2 cups shredded rotisserie chicken
- 1 can (10 oz) red enchilada sauce
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup diced bell peppers
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 corn tortillas, cut into strips
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 1/4 cup chopped fresh cilantro (for garnish)
- Sour cream (for serving, optional)
- Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
- In a large skillet over medium heat, sauté diced onion and bell peppers in olive oil for 5 minutes. Add garlic, cumin, chili powder, salt, and pepper; cook for 1 minute.
- Stir in the shredded chicken, black beans, corn, and half of the enchilada sauce until well combined.
- Layer a handful of tortilla strips on the bottom of the baking dish. Top with half of the chicken mixture and a layer of cheese.
- Repeat the layers with the remaining tortilla strips and chicken mixture, finishing with the rest of the cheese.
- Pour the remaining enchilada sauce over the top of the casserole.
- Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until bubbly and golden.
- Let stand for 5-10 minutes before garnishing with cilantro and serving.
