Sheet-Pan Honey Garlic Chicken & Potatoes: Easy Meal

A delicious and easy one-pan meal featuring crispy skin-on chicken thighs and tender baby potatoes glazed in a sweet and savory honey garlic sauce.

  • 4 bone-in, skin-on chicken thighs
  • 1 pound baby potatoes, halved
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground ginger
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. In a small bowl, whisk together the honey, soy sauce, minced garlic, olive oil, ground ginger, black pepper, salt, and optional red pepper flakes until well combined.
  3. In a large mixing bowl, toss the halved baby potatoes with a drizzle of olive oil and a pinch of salt and pepper. Spread them cut-side up on one side of the sheet pan.
  4. Place the chicken thighs on the other side of the pan and pour the honey garlic sauce over them, coating each piece generously.
  5. Roast for 35 to 40 minutes until the chicken reaches an internal temperature of 165°F and the skin is crispy. Stir the potatoes halfway through.
  6. Remove from the oven and let rest for 5 minutes. Garnish with fresh parsley before serving.

Notes

  • Ensure the potatoes are cut into similar sizes for even cooking.
  • Use a meat thermometer to ensure the chicken is cooked through without becoming dry.
  • For extra crispy skin, you can broil the chicken for the last 2-3 minutes of cooking.
