- Salt and pepper, to taste
- 4 slices American cheese
- 4 brioche burger buns
- 1 tablespoon vegetable oil
- Optional toppings: lettuce, tomato, pickles, onions, ketchup, mustard, or mayo
- Preheat a cast-iron skillet or griddle over medium-high heat until very hot.
- Divide the ground beef into four 4-ounce portions and gently form them into loose balls without overworking the meat.
- Add vegetable oil to the skillet. Place the beef balls onto the skillet with ample space between them.
- Using a sturdy spatula or burger press, smash each ball firmly until approximately 1/2 inch thick. Season immediately with salt and pepper.
- Cook undisturbed for 2 to 3 minutes to develop a crust, then flip.
- Immediately place a slice of cheese on each patty and cook for another 1 to 2 minutes until the cheese is melted (internal temperature of 160°F).
- Toast the burger buns in the skillet for about 1 minute until golden brown.
