These Southern-Style Honey Butter Cornbread Poppers are bite-sized, fluffy treats that perfectly balance sweet honey and savory cornmeal with a hint of optional heat.

Ingredients

Scale
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup honey
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/2 cup honey butter (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a mini muffin tin thoroughly with cooking spray or butter.
  2. In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the buttermilk, melted butter, eggs, and honey until well blended.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
  5. Fold in the corn kernels and optional cayenne pepper.
  6. Spoon the batter into the mini muffin tin, filling each cup about two-thirds full.
  7. Bake for 12 to 15 minutes, or until the tops are golden brown and a toothpick comes out clean.
  8. Let the poppers cool in the tin for 5 minutes before transferring them to a wire rack.
  9. Serve warm with a dollop of honey butter.

Notes

  • Do not overmix the batter to ensure a light and fluffy texture.
  • You can use a standard muffin tin, but baking time will increase to 18-20 minutes.
  • For extra moisture, ensure your buttermilk is at room temperature before mixing.
