  • 4 medium cucumbers, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon chili garlic sauce (adjust to taste)
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon sesame seeds
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Slice the cucumbers and red onion thinly. Optional: Sprinkle salt on cucumbers and let sit for 10 minutes to draw out moisture, then drain.
  2. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, chili garlic sauce, and grated ginger until well combined.
  3. Place the cucumbers and onions in a large mixing bowl.
  4. Pour the dressing over the vegetables and toss thoroughly to coat every slice.
  5. Add sesame seeds and chopped cilantro, then season with salt and pepper to taste.
  6. Optional: Cover and refrigerate for 30 minutes to allow flavors to meld.
  7. Serve chilled.

  • For extra crunch, use Persian or English cucumbers as they have thinner skins and fewer seeds.
  • Adjust the chili garlic sauce based on your heat preference.
