Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy (3-5 minutes). Add eggs one at a time, mixing well, then stir in vanilla.
  3. Whisk flour, baking powder, and salt in a separate bowl. Gradually add to the wet mixture, alternating with milk. Fold in diced strawberries.
  4. Divide batter between pans and bake for 25-30 minutes. Cool in pans for 10 minutes, then transfer to a wire rack.
  5. Make caramel: Melt sugar in a saucepan until amber. Stir in butter, then slowly pour in heavy cream while stirring. Add vanilla and salt; let cool slightly.
  6. Make frosting: Beat softened butter until creamy. Gradually add powdered sugar, heavy cream, and vanilla. Beat on high until fluffy.
  7. Assemble: Place one cake layer on a plate, spread frosting, and drizzle caramel. Top with the second layer and frost the entire cake.
  8. Drizzle remaining caramel over the top and garnish with fresh strawberries.
