  • 1 package (10 count) egg roll wrappers
  • Vegetable oil, for frying

Instructions

  1. In a medium bowl, combine diced strawberries, granulated sugar, and lemon juice. Let sit for 10 minutes to create a syrup.
  2. In a separate bowl, whisk together softened cream cheese, powdered sugar, and vanilla extract until smooth and lump-free.
  3. Place an egg roll wrapper on a flat surface with one corner pointing towards you.
  4. Spoon 1 tablespoon of the cream cheese mixture onto the center, then top with a spoonful of the strawberry mixture.
  5. Moisten the edges of the wrapper with water. Fold the bottom corner over the filling, tuck in the sides, and roll tightly to seal.
  6. Heat 2 inches of vegetable oil in a pot to 350°F.
  7. Fry the egg rolls in batches for 2-3 minutes per side until golden brown and crispy.
