A refreshing and vibrant 10-minute summer salad featuring crisp baby spinach, sweet strawberries, tangy feta, and crunchy toasted almonds tossed in a balsamic vinaigrette.

  • 6 cups fresh baby spinach, washed and dried
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup sliced almonds, toasted
  • 1/4 cup balsamic vinaigrette (store-bought or homemade)
  • Salt and pepper to taste

Instructions

  1. Rinse the baby spinach under cold water and spin dry or pat dry with paper towels.
  2. In a large salad bowl, combine the fresh spinach, sliced strawberries, and thinly sliced red onion.
  3. Sprinkle the crumbled feta cheese and toasted sliced almonds over the top of the greens and fruit.
  4. Drizzle the balsamic vinaigrette evenly over the salad components.
  5. Gently toss the salad to coat all ingredients with the dressing, taking care not to bruise the spinach or strawberries.
  6. Season with a pinch of salt and pepper to taste and serve immediately.

Notes

  • To toast almonds: Place them in a dry skillet over medium heat for 3-5 minutes until golden and fragrant.
  • For a homemade dressing: Mix equal parts balsamic vinegar and olive oil with a teaspoon of honey.
  • Add grilled chicken or shrimp to turn this side dish into a protein-packed main course.
  • Wait to add the dressing until right before serving to prevent the spinach from wilting.
