Strawberry Yogurt Dessert: A Quick & Healthy Treat

A light, refreshing, and healthy layered parfait featuring macerated fresh strawberries, creamy honey-sweetened Greek yogurt, and crunchy granola.

Ingredients

Scale
  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups plain Greek yogurt
  • 1/4 cup honey (adjust to taste)
  • 1/2 teaspoon lemon juice
  • 1/4 cup granola (for topping)
  • Fresh mint leaves (for garnish, optional)

Instructions

  1. In a medium bowl, toss the sliced strawberries with granulated sugar and vanilla extract. Let sit for 15-20 minutes to macerate and create a syrup.
  2. In a separate bowl, combine the Greek yogurt, honey, and lemon juice. Stir well until smooth and blended.
  3. In serving glasses or bowls, layer the yogurt mixture and the macerated strawberries, alternating until the glass is full.
  4. Finish with a final layer of strawberries on top.
  5. Sprinkle with granola and garnish with a mint leaf if desired.
  6. Serve immediately or chill in the refrigerator for 30 minutes.

Notes

  • For a lower sugar version, reduce the granulated sugar or use a natural sweetener like stevia.
  • Ensure strawberries are ripe and firm for the best texture.
  • Add the granola just before serving to keep it from getting soggy.
  • You can substitute Greek yogurt with dairy-free yogurt for a vegan-friendly version.
