  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken breasts, sliced thin
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced (red, green, or yellow)
  • 1 cup snap peas
  • 1/2 cup carrots, julienned
  • 1/2 cup onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Green onions, sliced, for garnish

Instructions

  1. Cook the lo mein noodles according to package instructions. Drain and set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Season chicken with salt and pepper, then stir-fry for 5-7 minutes until cooked through. Remove chicken and set aside.
  3. In the same skillet, add broccoli, bell peppers, snap peas, carrots, and onion. Stir-fry for 3-4 minutes until tender-crisp.
  4. Add minced garlic and ginger to the vegetables and stir-fry for 1 minute until fragrant.
  5. Return the chicken to the skillet. In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, and chicken broth. Pour the mixture over the chicken and vegetables.
  6. Add the cooked noodles to the skillet and toss gently. Drizzle with sesame oil.
  7. Cook for 2-3 minutes, stirring frequently, until the sauce thickens and everything is heated through.
  8. Garnish with sliced green onions and serve hot.

Notes

  • Do not overcook the noodles; they should be slightly firm (al dente) as they will cook more in the wok.
  • For a spicier version, add a teaspoon of red chili flakes or sriracha to the sauce.
  • Ensure all vegetables are chopped to a similar size for even cooking.
