- 8 ounces lo mein noodles
- 2 tablespoons vegetable oil
- 1 pound boneless, skinless chicken breasts, sliced thin
- 1 cup broccoli florets
- 1 cup bell peppers, sliced (red, green, or yellow)
- 1 cup snap peas
- 1/2 cup carrots, julienned
- 1/2 cup onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 1/4 cup chicken broth
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Green onions, sliced, for garnish
- Cook the lo mein noodles according to package instructions. Drain and set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Season chicken with salt and pepper, then stir-fry for 5-7 minutes until cooked through. Remove chicken and set aside.
- In the same skillet, add broccoli, bell peppers, snap peas, carrots, and onion. Stir-fry for 3-4 minutes until tender-crisp.
- Add minced garlic and ginger to the vegetables and stir-fry for 1 minute until fragrant.
- Return the chicken to the skillet. In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, and chicken broth. Pour the mixture over the chicken and vegetables.
- Add the cooked noodles to the skillet and toss gently. Drizzle with sesame oil.
- Cook for 2-3 minutes, stirring frequently, until the sauce thickens and everything is heated through.
- Garnish with sliced green onions and serve hot.
Notes
- Do not overcook the noodles; they should be slightly firm (al dente) as they will cook more in the wok.
- For a spicier version, add a teaspoon of red chili flakes or sriracha to the sauce.
- Ensure all vegetables are chopped to a similar size for even cooking.
