Taco Macaroni & Cheese With Queso: Easy Recipe!

A delicious and creamy fusion of two comfort food classics, featuring seasoned ground meat, tender macaroni, and a rich blend of cheddar and queso cheese sauce.

  • 8 ounces elbow macaroni
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup water
  • 1 cup milk
  • 2 cups shredded sharp cheddar cheese
  • 1 cup queso cheese sauce
  • 1/2 cup diced tomatoes (fresh or canned)
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup chopped green onions (for garnish)
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and set aside without rinsing.
  2. In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat.
  3. Add taco seasoning and water to the meat. Stir and simmer for about 5 minutes until the sauce thickens.
  4. Reduce heat to low. Stir in the milk and gradually add shredded cheddar cheese, stirring until melted and creamy.
  5. Stir in the cooked macaroni and the queso cheese sauce until well combined.
  6. Fold in diced tomatoes and black olives if using.
  7. Season with salt and pepper to taste. Add jalapeños or hot sauce if additional heat is desired.
  8. Serve hot, garnished with chopped green onions.

Notes

  • Do not rinse the pasta after draining to help the cheese sauce stick better.
  • You can swap ground beef for ground turkey for a leaner option.
  • For a spicier kick, use 'Hot' taco seasoning or add diced jalapeños.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
