  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup salsa (mild or spicy)
  • 2 cups shredded cheddar cheese, divided
  • 1 bag (32 ounces) frozen tater tots
  • 1/2 cup sour cream (optional, for serving)
  • 1/4 cup chopped green onions (for garnish)

Instructions

  1. Preheat your oven to 400°F and grease a 9x13-inch baking dish with cooking spray.
  2. In a large skillet over medium heat, brown the ground beef and drain excess fat.
  3. Add taco seasoning and water according to package instructions; simmer for 5 minutes.
  4. Stir in the black beans, corn, and salsa until well combined.
  5. Spread the beef mixture into the bottom of the prepared baking dish.
  6. Sprinkle 1 cup of shredded cheddar cheese over the beef layer.
  7. Arrange the frozen tater tots in a single layer over the cheese.
  8. Bake for 25 to 30 minutes until the tots are golden brown and crispy.
  9. Sprinkle the remaining 1 cup of cheese on top and bake for another 5 minutes until melted.
  10. Let cool slightly, garnish with sour cream and green onions, and serve.
