- 1 pound beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1 bell pepper, chopped
- 1 can (14.5 ounces) diced tomatoes, with juices
- 4 cups beef broth
- 2 cups water
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- 2 cups frozen mixed vegetables (peas, corn, and green beans)
- 1 tablespoon Worcestershire sauce
- Fresh parsley, chopped (for garnish)
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and brown them on all sides (5-7 minutes). Remove beef and set aside.
- In the same pot, sauté the chopped onion until translucent (3-4 minutes). Add minced garlic and stir for 30 seconds until fragrant.
- Add sliced carrots, celery, and bell pepper. Cook for 5 minutes until they start to soften.
- Return the beef to the pot. Add diced tomatoes, beef broth, water, thyme, oregano, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat to low and simmer uncovered for 1 hour.
- Add frozen mixed vegetables and Worcestershire sauce. Simmer for another 15-20 minutes until beef and vegetables are tender.
- Remove the bay leaf and garnish with fresh parsley before serving.
