- 1 pound beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 medium carrots, sliced
- 2 stalks celery, chopped
- 1 medium potato, diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 cup corn kernels (fresh or frozen)
- 1 can (14.5 ounces) diced tomatoes, undrained
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and brown them on all sides (5-7 minutes). Remove beef and set aside.
- In the same pot, sauté chopped onion and garlic for 2-3 minutes. Add carrots and celery and cook for another 5 minutes until softening.
- Return the beef to the pot. Add diced potato, green beans, corn, diced tomatoes (with juice), beef broth, Worcestershire sauce, thyme, basil, and bay leaf. Stir and scrape the bottom of the pot to release browned bits.
- Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours until the beef is tender, stirring occasionally.
- Season with salt and pepper to taste. Remove the bay leaf.
- Ladle into bowls and garnish with fresh parsley.
Notes
- For a thicker stew-like consistency, let it simmer uncovered for the last 20 minutes.
- If the soup becomes too thick during simmering, add a splash more broth or water.
- Always remove the bay leaf before serving as it is not meant to be eaten.
- Pairs perfectly with crusty sourdough bread or a light side salad.
