Watermelon Mint Agua Fresca: Refreshing Summer Hero

A light, hydrating, and incredibly refreshing Mexican-inspired fruit drink made with ripe watermelon, zesty lime, and cooling fresh mint.

Ingredients

  • 4 cups seedless watermelon, cubed
  • 1/4 cup fresh mint leaves, plus extra for garnish
  • 2 tablespoons lime juice (about 1 lime)
  • 2 tablespoons agave syrup or honey
  • 2 cups cold water
  • Ice cubes

Instructions

  1. Place the cubed watermelon into a blender and process until smooth.
  2. Add the fresh mint leaves to the blender and pulse until the mint is finely chopped and incorporated into the puree.
  3. Strain the mixture through a fine-mesh sieve into a large pitcher to remove pulp (optional). Press the solids with a spoon to extract all juice.
  4. Stir in the lime juice and agave syrup (or honey). Adjust sweetness to taste.
  5. Pour in the cold water and stir well.
  6. Fill glasses with ice, pour the agua fresca over the ice, and garnish with fresh mint sprigs.

Notes

  • Choose a heavy, ripe watermelon with a yellow ground spot for the best flavor.
  • If your watermelon is very sweet, you can omit the agave or honey entirely.
  • For a sparkling version, replace the cold water with sparkling water or club soda just before serving.
  • Best served immediately or chilled for up to 24 hours.
