- 4 cups seedless watermelon, cubed
- 1/4 cup fresh mint leaves, plus extra for garnish
- 2 tablespoons lime juice (about 1 lime)
- 2 tablespoons agave syrup or honey
- 2 cups cold water
- Ice cubes
- Place the cubed watermelon into a blender and process until smooth.
- Add the fresh mint leaves to the blender and pulse until the mint is finely chopped and incorporated into the puree.
- Strain the mixture through a fine-mesh sieve into a large pitcher to remove pulp (optional). Press the solids with a spoon to extract all juice.
- Stir in the lime juice and agave syrup (or honey). Adjust sweetness to taste.
- Pour in the cold water and stir well.
- Fill glasses with ice, pour the agua fresca over the ice, and garnish with fresh mint sprigs.
Notes
- Choose a heavy, ripe watermelon with a yellow ground spot for the best flavor.
- If your watermelon is very sweet, you can omit the agave or honey entirely.
- For a sparkling version, replace the cold water with sparkling water or club soda just before serving.
- Best served immediately or chilled for up to 24 hours.
