White Chicken Chili: Easy Creamy One-Pot Recipe.

A creamy, hearty, and flavorful one-pot White Chicken Chili made with tender chicken, white beans, green chiles, and a rich creamy base.

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 can (4 ounces) diced green chiles
  • 4 cups chicken broth
  • 1 cup corn (fresh, frozen, or canned)
  • Salt and pepper, to taste
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)
  • Shredded cheese (optional, for serving)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Sauté diced onion until translucent (about 5 minutes), then add garlic and cook for 1 minute.
  2. Add diced chicken, cumin, chili powder, oregano, and cayenne. Cook until chicken is browned and cooked through (5-7 minutes).
  3. Stir in white beans, green chiles, chicken broth, and corn. Bring to a simmer, then reduce heat to low and cook for 20-25 minutes.
  4. Stir in sour cream, heavy cream, and lime juice. Season with salt and pepper. Heat through for an additional 5 minutes.
  5. Serve hot, garnished with cilantro and shredded cheese if desired.

Notes

  • For a thicker chili, smash 1/2 cup of the white beans before adding them to the pot.
  • Adjust the cayenne pepper to control the heat level.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
