- Heat one tablespoon of vegetable oil in a large wok or skillet over medium high heat.
- Pour the beaten eggs into the hot skillet and scramble them quickly until they are just set.
- Remove the scrambled eggs from the pan and set them aside on a clean plate.
- Add the remaining tablespoon of oil to the same wok and toss in the diced onions.
- Sauté the onions for 2 to 3 minutes until they become translucent and slightly soft.
- Stir in the peas carrots and minced garlic and cook for an additional minute until fragrant.
- Increase the heat to high and add the chilled rice to the vegetable mixture.
- Break up any large clumps of rice with your spatula and stir constantly for 3 to 5 minutes to fry the grains.
- Pour the soy sauce and toasted sesame oil over the rice and stir thoroughly to coat every grain.
- Season the mixture with black pepper and add the scrambled eggs back into the wok.
- Toss everything together for another minute until the rice is heated through and slightly crisp.
- Remove the wok from the heat and stir in the sliced green onions before serving.
Notes
Using cold leftover rice is the most important step to prevent the dish from becoming mushy or sticky.
If you do not have jasmine rice any long grain white rice will work as long as it has been thoroughly chilled.
You can easily add cooked shrimp chicken or pork during the final tossing step to make this a complete meal.
For a bit of extra heat add a teaspoon of sriracha or chili garlic sauce along with the soy sauce.
