Boozy Banana Bliss Jam: Drunken Monkey Jam

This unique and tropical jam combines the creamy sweetness of ripe bananas with the warmth of spiced rum and a hint of lime. It features a splash of vanilla and a touch of cinnamon to create a sophisticated spread that tastes like bananas foster in a jar.

Ingredients
  

  • 3 cups mashed ripe bananas about 6 to 8 bananas
  • ¼ cup fresh lime juice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 box powdered fruit pectin 1.75 ounces
  • 5 cups granulated sugar
  • ½ cup spiced rum
  • 1 teaspoon vanilla extract

  • Large heavy bottomed pot
  • Potato Masher
  • Wooden spoon
  • Measuring cups
  • Measuring spoons
  • Canning jars with lids
  • Sterilizer or large stockpot for water bath

Method
 

  1. Place the mashed bananas into a large heavy bottomed pot and stir in the fresh lime juice.
  2. Stir the ground cinnamon and ground nutmeg into the banana mixture until the spices are evenly distributed.
  3. Gradually whisk in the powdered fruit pectin until it is completely dissolved into the fruit.
  4. Bring the banana mixture to a full rolling boil over high heat while stirring constantly to prevent scorching.
  5. Add the granulated sugar all at once and stir vigorously until the sugar has completely melted.
  6. Return the mixture to a full rolling boil and cook for exactly one minute while continuing to stir.
  7. Remove the pot from the heat and carefully stir in the spiced rum and vanilla extract.
  8. Skim off any foam that has formed on the surface of the jam using a metal spoon.
  9. Ladle the hot jam into sterilized canning jars leaving about one quarter inch of headspace at the top.
  10. Wipe the rims of the jars clean and screw on the lids until they are finger tight.
  11. Process the jars in a boiling water bath for ten minutes to ensure a proper seal for long term storage.
  12. Remove the jars from the water bath and let them sit undisturbed for twenty four hours to set.

Notes

Use very ripe bananas with plenty of brown spots for the best flavor and natural sweetness in your jam.
The alcohol in the rum will mostly cook off but the rich spiced flavor will remain concentrated in the spread.
This jam is excellent when served over warm biscuits vanilla ice cream or even used as a filling for crepes.
Store unopened jars in a cool dark place for up to one year or keep opened jars in the refrigerator for three weeks.
