Cheesy Mexican Beef Dorito Casserole: The Ultimate Comfort Dinner

This hearty and flavorful bake features layers of seasoned ground beef zesty Mexican vegetables and crunchy Doritos. It is topped with a generous layer of melted cheese to create a satisfying family meal that is both creamy and crisp.

Ingredients
  

  • 1 pound lean ground beef
  • 1 small yellow onion diced
  • 1 packet taco seasoning 1 ounce
  • ½ cup water
  • 1 can condensed cream of chicken soup 10.5 ounces
  • 1 can Rotel diced tomatoes and green chilies 10 ounces
  • 1 can black beans 15 ounces drained and rinsed
  • 1 can whole kernel corn 15 ounces drained
  • 1 bag Nacho Cheese Doritos 9.25 ounces
  • 2 cups shredded Mexican blend cheese
  • ¼ cup fresh cilantro chopped
  • ½ cup sour cream for serving

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit and lightly grease a 9x13-inch baking dish.
  2. Place the lean ground beef and diced onion in a large skillet over medium-high heat.
  3. Cook the beef until it is thoroughly browned and the onions have become soft and translucent.
  4. Drain any excess grease from the skillet and return the beef mixture to the heat.
  5. Stir in the taco seasoning and water then simmer for 5 minutes until the liquid has thickened.
  6. Add the cream of chicken soup Rotel tomatoes black beans and corn to the skillet.
  7. Stir the mixture constantly until all the ingredients are well combined and heated through.
  8. Crush half of the bag of Doritos and spread them evenly across the bottom of the prepared baking dish.
  9. Pour the beef and vegetable mixture over the layer of crushed chips and smooth the top with a spoon.
  10. Sprinkle the shredded Mexican blend cheese evenly over the top of the beef filling.
  11. Crush the remaining Doritos and sprinkle them over the cheese layer for an extra crunchy topping.
  12. Bake for 20 to 25 minutes or until the cheese is bubbly and the edges are golden brown.
  13. Remove the casserole from the oven and garnish with fresh chopped cilantro before serving.

Notes

Using lean ground beef helps prevent the bottom layer of chips from becoming too soggy during the baking process.
You can swap the Nacho Cheese Doritos for Cool Ranch flavor to add a different zesty twist to this recipe.
For the best texture wait to add the top layer of crushed chips until the last 10 minutes of baking if you want them extra crispy.
