Classic Meatloaf with Mashed Potatoes

A comforting classic meal with juicy meatloaf and creamy mashed potatoes — perfect for family dinners or cozy nights at home.

Ingredients
  

  • For the Meatloaf:
  • 1 lb ground beef
  • ½ lb ground pork
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 1 egg
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • For the Mashed Potatoes:
  • 4 medium potatoes peeled and cubed
  • ½ cup milk
  • 4 tablespoon butter
  • Salt and pepper to taste
  • Fresh parsley optional, for garnish

Method
 

  1. Preheat the oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
  2. In a large bowl, combine ground beef, pork, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, thyme, salt, and pepper. Mix gently until just combined.
  3. Press the mixture into the loaf pan and smooth the top.
  4. Bake for 50–60 minutes, or until the center reaches 160°F (70°C).
  5. While the meatloaf bakes, prepare the mashed potatoes: Boil cubed potatoes in salted water for 15–20 minutes or until fork-tender.
  6. Drain the potatoes, return them to the pot, add milk, butter, salt, and pepper, then mash until smooth and creamy.
  7. Let the meatloaf rest for 10 minutes. Slice and serve with mashed potatoes. Garnish with fresh parsley if desired.
