- Preheat the oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
- In a large bowl, combine ground beef, pork, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, thyme, salt, and pepper. Mix gently until just combined.
- Press the mixture into the loaf pan and smooth the top.
- Bake for 50–60 minutes, or until the center reaches 160°F (70°C).
- While the meatloaf bakes, prepare the mashed potatoes: Boil cubed potatoes in salted water for 15–20 minutes or until fork-tender.
- Drain the potatoes, return them to the pot, add milk, butter, salt, and pepper, then mash until smooth and creamy.
- Let the meatloaf rest for 10 minutes. Slice and serve with mashed potatoes. Garnish with fresh parsley if desired.
