Cottage Cheese Bagels

These Cottage Cheese Bagels are soft chewy and packed with protein. They take the familiar bagel and give it a healthy upgrade for a tender interior and satisfying crust. Perfect for a high-protein breakfast or a hearty snack that you can easily bake at home.

Ingredients
  

  • 1 cup cottage cheese drained
  • 1 cup all-purpose flour plus extra for dusting
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 egg for egg wash

Method
 

  1. Optional toppings like sesame seeds poppy seeds or everything seasoning
  2. Preheat your oven to 375°F or 190°C and line a baking sheet with parchment paper.
  3. Drain the cottage cheese using a fine mesh strainer to remove excess liquid for a firmer dough.
  4. In a large mixing bowl combine the drained cottage cheese flour baking powder and salt.
  5. Mix the ingredients together until a dough forms being careful not to overmix.
  6. Divide the dough into six equal pieces on a lightly floured surface.
  7. Roll each piece into a log and shape it into a bagel by pinching the ends together.
  8. Place the shaped bagels onto the prepared baking sheet.
  9. Beat the egg in a small bowl and brush it over the tops of the bagels using a pastry brush.
  10. Add any optional toppings like sesame seeds or everything seasoning if desired.
  11. Bake for 20 to 22 minutes or until the bagels are golden brown and cooked through.
  12. Let the bagels cool slightly on the pan to allow them to firm up before slicing.

Notes

Using slightly damp hands while shaping the dough can help prevent it from sticking to your fingers.
Store these bagels in an airtight container at room temperature for two days or in the fridge for up to five days.
You can freeze individually wrapped bagels for up to two months and toast them directly from frozen.
For a tangy twist you can substitute the cottage cheese with Greek yogurt using the same measurements.
