Crispy Baked Zucchini Fries

These golden fries are baked to achieve a crunchy exterior and a tender inside. They serve as a guilt free snack or a wholesome side for summer gatherings. This clever recipe is family friendly and perfect for sneaking more veggies into meals.

Ingredients
  

  • 2 medium zucchinis
  • 2 large eggs
  • 0.5 cup all purpose flour
  • 1 cup panko breadcrumbs
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • Cooking spray or olive oil

  • Wire Rack
  • Three shallow bowls
  • Knife
  • Cutting Board

Method
 

  1. Preheat your oven to 425 degrees Fahrenheit or 220 degrees Celsius.
  2. Line a baking sheet with parchment paper and place a wire rack on top.
  3. Wash and dry the zucchinis then cut them into sticks half an inch thick and 3 to 4 inches long.
  4. Put flour in the first bowl whisked eggs in the second and the panko with all spices in the third.
  5. Dredge each zucchini stick in flour then dip in the egg and coat in the seasoned panko.
  6. Place the coated fries on the rack or baking sheet leaving space between them.
  7. Lightly mist the zucchini fries with cooking spray or olive oil.
  8. Bake for 20 to 25 minutes until the fries are golden brown and crisp.
  9. Serve the fries hot with your choice of dipping sauce like marinara or garlic aioli.

Notes

Using a wire rack on the baking sheet allows air to circulate for a crispier finish.
Blot the zucchini sticks with paper towels to remove excess moisture before breading.
Panko breadcrumbs are recommended to achieve a light and airy crunch.
You can freeze coated fries before baking and cook them directly from frozen.
Reheat any leftovers in an oven or air fryer to restore the original crispness.
