Hearty Healthy Cabbage Soup with Ground Beef

  • Green cabbage
  • Carrots
  • Celery
  • Onion
  • Garlic
  • Diced tomatoes
  • Beef broth
  • Olive oil

  • Italian seasoning

Method
 

  1. Chop the cabbage carrots celery onion and garlic
  2. Heat olive oil in a large pot over medium heat
  3. Add the ground beef and cook until browned
  4. Remove excess fat if necessary
  5. Add the chopped onions garlic carrots and celery and cook until softened
  6. Stir in the diced tomatoes and cabbage
  7. Pour in the beef broth
  8. Season with salt black pepper and Italian seasoning
  9. Bring the soup to a boil then reduce heat to simmer
  10. Cover and cook for 25 to 30 minutes until vegetables are tender
  11. Taste and adjust seasoning if needed
  12. Serve hot for a comforting meal

Notes

Use fresh vegetables for the best flavor
Do not overcook the cabbage to maintain some texture
Add a splash of vinegar or lemon juice to brighten the flavors
