- Chop the onion carrot celery and garlic
- Heat olive oil in a large pot over medium heat
- Add the chopped vegetables and cook until softened
- Stir in the diced tomatoes and cook for a few minutes
- Add the beans and broth and bring to a boil
- Season with salt black pepper and Italian seasoning
- Reduce heat to simmer and cook for 15 minutes
- Add the small pasta and cook until tender
- Taste and adjust seasoning if needed
- Serve hot and sprinkle with Parmesan cheese
Notes
Use fresh vegetables for the best flavor
Do not overcook the pasta to prevent it from becoming mushy
Add a splash of olive oil or a pinch of red pepper flakes for extra flavor
