Hearty Homemade Pasta e Fagioli

A classic Italian soup combining tender pasta, beans, and vegetables in a savory broth, perfect for a warm and comforting meal.

Ingredients
  

  • Olive oil
  • Onion
  • Carrot
  • Celery
  • Garlic
  • Diced tomatoes
  • Cannellini beans
  • Chicken or vegetable broth
  • Small pasta
  • Salt
  • Black pepper
  • Italian seasoning
  • Parmesan cheese

Method
 

  1. Chop the onion carrot celery and garlic
  2. Heat olive oil in a large pot over medium heat
  3. Add the chopped vegetables and cook until softened
  4. Stir in the diced tomatoes and cook for a few minutes
  5. Add the beans and broth and bring to a boil
  6. Season with salt black pepper and Italian seasoning
  7. Reduce heat to simmer and cook for 15 minutes
  8. Add the small pasta and cook until tender
  9. Taste and adjust seasoning if needed
  10. Serve hot and sprinkle with Parmesan cheese

Notes

Use fresh vegetables for the best flavor
Do not overcook the pasta to prevent it from becoming mushy
Add a splash of olive oil or a pinch of red pepper flakes for extra flavor
Store leftovers in the refrigerator and reheat gently
