Savory Sausage, Green Bean, and Potato Bake

This hearty sheet pan meal combines smoky smoked sausage, tender potatoes, and crisp-tender green beans. Everything is seasoned with a savory blend of garlic and herbs. It is an easy, one-pan dinner perfect for busy weeknights with minimal cleanup.

Ingredients
  

  • 1 pound smoked sausage sliced into rounds
  • 1 pound fresh green beans trimmed
  • 1.5 pounds baby gold potatoes halved or quartered
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup grated parmesan cheese

Method
 

  1. Preheat your oven to 400°F (200°C) and lightly grease a large sheet pan.
  2. In a large mixing bowl, toss the sliced sausage, potatoes, and green beans with olive oil and all seasonings.
  3. Spread the mixture in a single layer onto the prepared sheet pan.
  4. Bake for 25 to 30 minutes, tossing halfway through, until the potatoes are fork-tender.
  5. If using parmesan cheese, sprinkle it over the top during the last 5 minutes of baking.
  6. Remove from the oven and serve hot.

Notes

Cut the potatoes into small, uniform pieces to ensure they cook at the same speed as the beans.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
