Method
- Slice the beef into thin strips
- Cut the bell peppers and onion into slices
- Heat oil in a skillet and quickly sear the beef until browned
- Transfer the beef to the slow cooker
- Add the sliced peppers, onion, and minced garlic
- In a bowl, mix soy sauce and beef broth
- Pour the sauce mixture over the beef and vegetables
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours
- In a small bowl, mix cornstarch with water to create a slurry
- Add the slurry to the slow cooker and stir well
- Cook for an additional 20 minutes until the sauce thickens
- Serve hot over rice or noodles
Notes
Use tender cuts of beef for best results
Do not skip searing as it adds extra flavor
Adjust seasoning according to taste
Store leftovers in the refrigerator for up to three days
