Watermelon Feta Salad

Ingredients
  

  • 4 cups seedless watermelon cut into cubes
  • 1 cup feta cheese crumbled
  • 0.25 cup fresh mint leaves chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • Salt to taste
  • Freshly ground black pepper to taste

Method
 

  1. Place the watermelon cubes in a large bowl.
  2. Add the crumbled feta cheese and chopped mint leaves to the bowl.
  3. Whisk together the olive oil lime juice salt and pepper in a small separate bowl.
  4. Drizzle the prepared dressing over the watermelon mixture.
  5. Gently toss everything together to combine without breaking the watermelon or feta pieces.
  6. Serve the salad immediately or refrigerate for up to 1 hour before serving to chill.

Notes

Use seedless watermelon that is chilled but not icy cold to maintain the best crisp texture.
Crumble your feta cheese just before serving so it stays as creamy and fresh as possible.
Drain any excess liquid from the feta if it was packed in brine to avoid a soggy salad.
Add the dressing just before serving to keep the ingredients fresh and crisp.
You can substitute lime juice with lemon juice if preferred.
